As much as I considered Prometheus to be my MOTY of 2012, I tend to look back and contemplate how it could've been better. Prometheus was supposed to explore the origins of Humanity, and what our role plays to the Engineers, who are basically our gods. Any and all interesting content that could've been explored has been left out of the movie, only available as original screenplays that have been leaked out to the Internet.
As for your take on the Offspring, I guess I'm the oddball out. I have a friend who said that that whole sequence was "uninspired". It's making me question if it's right to have liked and appreciated this movie. I thought the Offspring was a real surprise, and even something new and different from the Xenomorph.....not that I dislike the Xenomorph; I just thought there was something refreshing about a new creature being implemented. Though, I have noticed that there are people out there saying "This is an Engineer!" and I just can't be there to keep them in check by telling them, "You idiots! That's not an Engineer!" because they clearly missed out on Rook's expositions and proposal that Humanity is incapable of living in outer space without that black goo....thus, this "Offspring" is a possible step up in our evolution, although I shouldn't really say that because the Offspring was really the result of Kay being stupid.
I guess there's always the expanded universe of the franchise that can give us what we want....though, I will admit that I haven't really read any of the novels and comics throughout the years.

Then again, the way I see it, even if it's just speculation, David⁸ creating the Xenomorph ties in with his claims in Alien: Covenant. In the movie, he says something along the lines of how Humanity has outlived its usefulness, that they're a dying species still trying to hold on. "The Secrets of David's Lab" seems to imply that David⁸ inevitably created the Xenomorph species, and they have been set loose throughout the galaxy.....though, how the species proliferated that widespread is currently unknown.
For those preferring the Engineers to have been the creators of the Xenomorphs, well, in fairness, lots of that hasn't been explored fully, at least per what little I know. There was the Deacon in Prometheus, and there have been theories throughout the decade concerning its relations to the Engineers, like how it's a religious entity. One thing for certain is that the Engineers created that black goo, and given what we've seen of its effects in the recent movies, only the Engineers know how to operate that stuff.
I agree. That "Offspring" was the best part of the movie, if only because it turned out to be quite a surprise.....at least to me, because I had expected Alien: Romulus to go as expected of Alien: Covenant (which itself rehashed the method from the original 1979 movie).
Though, I think that one Alien Theory guy took some words out of my mouth in his critique of the movie. Now that I think about it, Alien: Romulus seemed like something I would expect out of the expanded universe. However, I personally am appreciative of what all this movie touched upon. Besides, Sir Ridley Scott was amazed by this movie, so there.
